Grease the pan with olive oil and sprinkle with fine white cornmeal.

Combine spinach, spring onions, caramelised leek, dill, parsley, sea salt, pepper, and crumbled feta.

Whisk together Greek yoghurt, olive oil, eggs, and water in a separate bowl.

Stir in flour, cornmeal, salt, and baking soda to create the batter.

Incorporate the vegetable mixture into the batter.

Pour the mixture into the prepared pan and sprinkle with sesame seeds.
Ingredients
200 g spinach
2 whole spring onion, finely chopped
1 whole leek, sliced and caramelised
1/4 cup dill, finely chopped
1/2 cup parsley, finely chopped
1/2 tsp sea salt
black pepper (optional)
150 g feta cheese, crumbled
to taste olive oil, for greasing
1-2 tbsp fine white cornmeal
1 1/4 cup Greek yoghurt
40 ml olive oil
2 whole egg
1 1/4 cup water
100 g gluten-free plain flour
100 g white cornmeal
1 tsp sea salt
1/2 tsp baking soda
1-2 tbsp white sesame seeds
Tips
Use a variety of garden greens instead of spinach.
Add an extra 1-2 tbsp of water if the batter is not pourable.
For best results, use PAN brand white cornmeal.
