Lazy Spanakopita (Greek Blatsaria)

Directions

  1. 1Grease the pan with olive oil and sprinkle with fine white cornmeal.
  2. 2Combine spinach, spring onions, caramelised leek, dill, parsley, sea salt, pepper, and crumbled feta.
  3. 3Whisk together Greek yoghurt, olive oil, eggs, and water in a separate bowl.
  4. 4Stir in flour, cornmeal, salt, and baking soda to create the batter.
  5. 5Incorporate the vegetable mixture into the batter.
  6. 6Pour the mixture into the prepared pan and sprinkle with sesame seeds.

Ingredients

  • 200 g spinach
  • 2 whole spring onion, finely chopped
  • 1 whole leek, sliced and caramelised
  • 1/4 cup dill, finely chopped
  • 1/2 cup parsley, finely chopped
  • 1/2 tsp sea salt
  • black pepper (optional)
  • 150 g feta cheese, crumbled
  • to taste olive oil, for greasing
  • 1-2 tbsp fine white cornmeal
  • 1 1/4 cup Greek yoghurt
  • 40 ml olive oil
  • 2 whole egg
  • 1 1/4 cup water
  • 100 g gluten-free plain flour
  • 100 g white cornmeal
  • 1 tsp sea salt
  • 1/2 tsp baking soda
  • 1-2 tbsp white sesame seeds

Tips

  • Use a variety of garden greens instead of spinach.
  • Add an extra 1-2 tbsp of water if the batter is not pourable.
  • For best results, use PAN brand white cornmeal.
