Sausage Mac and Cheese

Directions

  1. 1Brown a pound of sausage in a large pot, breaking it up as it cooks.
  2. 2Once the sausage is browned, remove it from the pot and set it aside in a bowl.
  3. 3Add two tablespoons of olive oil, two tablespoons of butter, and one diced yellow onion to the same pot.
  4. 4Sauté the onion for a few minutes until it becomes soft and translucent.
  5. 5Add two minced garlic cloves and sauté for about a minute.
  6. 6Stir in a quarter cup of flour to create a roux.
  7. 7Stir in three and a half cups of milk.
  8. 8Add a quarter teaspoon of black pepper, a quarter teaspoon of smoked paprika, and a quarter teaspoon of dried mustard.
  9. 9Whisk the mixture until it is combined and continues to whisk until it noticeably thickens, which takes about 10 minutes.
  10. 10Add four cups of freshly shredded sharp white cheddar cheese and stir until it melts beautifully.
  11. 11Taste the cheese sauce and add more salt, pepper, or red pepper flakes if desired for a spicier flavor.
  12. 12Stir in a box of cooked elbow noodles.
  13. 13Return the browned sausage to the pot and stir to combine.
  14. 14Turn off the heat.
  15. 15Serve in a bowl and sprinkle with parsley if you want to be fancy.
