Directions
1
Brown a pound of sausage in a large pot, breaking it up as it cooks.
2
Once the sausage is browned, remove it from the pot and set it aside in a bowl.
3
Add two tablespoons of olive oil, two tablespoons of butter, and one diced yellow onion to the same pot.
4
Sauté the onion for a few minutes until it becomes soft and translucent.
5
Add two minced garlic cloves and sauté for about a minute.
6
Stir in a quarter cup of flour to create a roux.
7
Stir in three and a half cups of milk.
8
Add a quarter teaspoon of black pepper, a quarter teaspoon of smoked paprika, and a quarter teaspoon of dried mustard.
9
Whisk the mixture until it is combined and continues to whisk until it noticeably thickens, which takes about 10 minutes.
10
Add four cups of freshly shredded sharp white cheddar cheese and stir until it melts beautifully.
11
Taste the cheese sauce and add more salt, pepper, or red pepper flakes if desired for a spicier flavor.
12
Stir in a box of cooked elbow noodles.
13
Return the browned sausage to the pot and stir to combine.
14
Turn off the heat.
15
Serve in a bowl and sprinkle with parsley if you want to be fancy.
