Stuffed Grape Leaves (Warak Enab)

Directions

  1. 1Sauté 1 medium onion with 4 garlic cloves and 2 tbsp olive oil on medium heat until soft.
  2. 2Add in 300g ground beef or lamb, 1 tsp salt, 1 tsp 7 spice, and 1/2 tsp pepper.
  3. 3Increase the heat and brown the meat.
  4. 4Go in with 1 cup chopped grape leaves.
  5. 5Cook for 5 minutes.
  6. 6Add 1 cup washed rice, 2 cups stock or water, and 1/4 cup lemon juice.
  7. 7Let it come to a boil.
  8. 8Reduce the heat and cook covered for 15 minutes.
  9. 9Once done, remove from heat and leave covered for 10 minutes.
  10. 10Finish with a drizzle of olive oil, toum, and optional chili flakes.

Tips

  • Remove stems from jarred grape leaves and chop them into bite-sized pieces.
  • Cook covered for 15 minutes, then remove from heat and leave covered for 10 minutes.
