1Preheat oven to 375F. Line a baking sheet with parchment paper.
2Make the crumble topping by combining 1 cup of AP flour, ½ cup of brown sugar, ¼ cup of rolled oats, ½ tsp of cinnamon, and 6 tbsp of melted butter in a bowl. Mix until crumbly.
3Make the blueberry filling by combining 5 ½ cups of frozen wild blueberries, ½ cup of brown sugar, ½ cup of granulated sugar, 5 tbsp of AP flour, 4 tbsp of cornstarch, 1 tbsp of lemon juice, and 1 tsp of vanilla in a large bowl. Mix well.
4Cook the blueberry mixture in a large saucepan over medium heat until it thickens. Remove from heat.
5Lay out one sheet of puff pastry on parchment paper and slightly roll it out. Use pastry rings to cut out 4 rounds of dough for the base. Set aside.
6Lay out the second sheet of puff pastry on parchment paper, and slightly roll it out. Use the width of the pastry rings to make marks along the edges. Cut into strips, using the marks as a guide.
7Lightly brush the inside of the rings with melted butter. Place the rings on a baking sheet.
8Place one round of puff pastry into the bottom of each ring. Brush the edges with egg wash.
9Form and press the strips of puff pastry around the inside of the rings, pressing at the bottom. Secure where the ends of the strips meet with egg wash.
10Divide the filling among the pastry rings and press a few butter cubes into each. Evenly sprinkle the crumble topping on top.
11Bake at 375F for 45-55 minutes until puffed and golden. Run a knife along the edges and release the tarts.
12Plate and serve with crème anglaise or ice cream.
