Homemade Laffa

Directions

  1. 1In a mixer, knead all the ingredients for the dough at a low speed.
  2. 2Remove from mixer and place on a lightly oiled work surface.
  3. 3Divide the dough into 8 equal pieces, weighing about 110 g each.
  4. 4Round each piece of dough into a ball and place on a greased baking sheet. Cover.
  5. 5Heat a cast iron skillet with a little olive oil.
  6. 6Using your hands, roll out a piece of dough to a laffa shape. Place on the hot skillet and immediately cover with a lid.
  7. 7After a minute, lift to check for browning, then flip the laffa.
  8. 8Cover the skillet with a lid and let brown for another minute.
  9. 9Remove from the skillet and place on a plate or board, covering immediately with a towel.
  10. 10Repeat with the remaining dough, stacking them and covering with a towel. Serve immediately.

  • 3 tsp instant dry yeast
  • 2 1/2 tsp sugar
  • 4 cup all-purpose/bread flour
  • 1 1/2 tsp kosher salt
  • 1 cup olive oil
