2Lay the bacon out on your work surface. It's much easier to work with when it's really cold, so have everything ready to go before you lay your bacon out.
3Spoon on a couple of teaspoons of dark brown sugar and use your hands to spread it across the bacon. A little sugar goes a long way, so try not to be heavy-handed.
4If you want to kick it up with some heat, sprinkle on a little cayenne.
5Flip the bacon over and do the same thing to the other side.
6If you notice your bacon has a skinny end, put that one toward you. If it doesn't, just start with one end, roll to the middle, pick it up and then twist it, and then roll it around itself and secure it with two toothpicks.
7Place it in the muffin tin.
8Once your lined muffin tin is fully loaded, put them in a 3750F oven.
9These are going to take 35 to 40 minutes to cook, but start checking them at 30 minutes.
10Once they're done, take them out and immediately move them out of the muffin tin onto a cooling rack.
11After no more than 5 minutes, start pulling out the toothpicks with a paper towel.
12At this point, they're ready to eat. But if you want to get fancy like me, get you a vase and add some tissue paper, put the bacon on skewers, and I'm using some kale for the greenery.
