Directions
- 1Open the bag of chitlins and empty them into a large bowl in the sink.
- 2Rinse the chitlins under running water.
- 3Add salt to the chitlins and mix thoroughly by hand.
- 4Rinse the chitlins again with water.
- 5Use a knife to remove any excess fat or impurities from the chitlins.
- 6Place the cleaned chitlins into a colander.
- 7Rinse the chitlins in the colander with water and lemon juice, then add salt.
- 8Chop red, yellow, and orange bell peppers into small pieces.
- 9Cut onions into quarters.
- 10Chop celery into small pieces.
- 11Pour water into a large pot.
- 12Add the cleaned chitlins to the pot of water and boil for 20 minutes.
- 13Drain the chitlins and rinse them again.
- 14Add the rinsed chitlins back to the clean pot.
- 15Add the quartered onions to the pot with the chitlins.
- 16Add minced garlic to the pot.
- 17Add the chopped bell peppers and celery to the pot.
- 18Pour in chicken broth.
- 19Add apple cider vinegar.
- 20Add a variety of spices to the pot.
- 21Stir all ingredients together.
- 22Add bay leaves to the pot.
- 23Add water to the pot.
- 24Cover the pot with a lid and cook for 3-4 hours.
