Pork belly bites

Directions

  1. 1Cut the pork belly into strips, then into 1-inch cubes.
  2. 2In a jar, mix salt, black pepper, garlic powder, and paprika to prepare the rub.
  3. 3Coat the pork belly cubes with mustard and the prepared rub.
  4. 4Place the seasoned cubes on a wire rack.
  5. 5Smoke the pork belly at 250°F.
  6. 6Transfer the smoked pork belly to a foil tray, add butter cubes, and coat with Frank's RedHot BBQ sauce.
  7. 7Cover the tray with aluminum foil and smoke for an additional hour.
  8. 8Serve the finished pork belly bites and garnish with fresh chopped parsley.

  • 4 cubes butter
  • 1 bottle Frank's RedHot BBQ Sauce
