Chocolate Banana Tofu Pudding

Directions

  1. 1Add the banana, cacao powder, soy milk, silken tofu, and maple syrup to a blender.
  2. 2Blend until completely smooth.
  3. 3Pour the mixture into a small saucepan.
  4. 4Cook over a low heat for around 5 minutes, stirring frequently, until the mixture is gently bubbling and has thickened slightly.
  5. 5Before pouring into your serving jars or moulds, add a small splash of water to the base of each container.
  6. 6Pour in the pudding mixture.
  7. 7Leave to cool to room temperature, then transfer to the fridge for at least 3 hours until fully set.
  8. 8To serve, run a knife gently around the edge of each mould.
  9. 9Turn upside down onto a serving plate.
  10. 10Dust with raw cacao powder or top with shaved dark chocolate, and serve with fresh strawberries or berries.

Tips

  • Adding a source of protein and a healthy fat like tofu will make it a little bit more filling and nutritionally balanced.
  • Add a small splash of water to the base of each container before pouring in the pudding mixture to prevent sticking and make it easier to turn out.
