Add the banana, cacao powder, soy milk, silken tofu, and maple syrup to a blender.

Blend until completely smooth.

Pour the mixture into a small saucepan.

Cook over a low heat for around 5 minutes, stirring frequently, until the mixture is gently bubbling and has thickened slightly.

Before pouring into your serving jars or moulds, add a small splash of water to the base of each container.

Pour in the pudding mixture.

Leave to cool to room temperature, then transfer to the fridge for at least 3 hours until fully set.

To serve, run a knife gently around the edge of each mould.

Turn upside down onto a serving plate.

Dust with raw cacao powder or top with shaved dark chocolate, and serve with fresh strawberries or berries.

150 g silken tofu
2 tbsp maple syrup, reduced sugar preferred (depending on how sweet or ripe is the banana)

Tips
Adding a source of protein and a healthy fat like tofu will make it a little bit more filling and nutritionally balanced.
Add a small splash of water to the base of each container before pouring in the pudding mixture to prevent sticking and make it easier to turn out.
