Aloha Chicken and Rice Bake

Directions

  1. 1Add one and a half cups of minute rice to your baking dish.
  2. 2Add two cubed chicken breasts (about a pound).
  3. 3Add one diced red bell pepper.
  4. 4Add half of a red onion, diced.
  5. 5Add one 20 ounce can of pineapple tidbits and juice.
  6. 6Mix all the ingredients in the baking dish together.
  7. 7For the sauce, start with three quarters of a cup of chicken broth.
  8. 8Add half a cup of coconut aminos or soy sauce.
  9. 9Add a quarter cup of brown sugar.
  10. 10Add three or four minced garlic cloves.
  11. 11If you have any fresh ginger, grate some into the sauce.
  12. 12Whisk the sauce ingredients until beautifully combined.
  13. 13Pour the sauce on top of everything in the baking dish.
  14. 14Cover the whole thing with foil.
  15. 15Throw it in the oven at 425 degrees Fahrenheit for about 50 minutes.
  16. 16When it comes out of the oven, carefully remove the foil.
  17. 17Check to make sure there isn't still too much liquid.
  18. 18If there is too much liquid, put the foil back on and throw it back in the oven.
  19. 19If you have some fresh cut green onions, sprinkle them on top.
  20. 20Serve in a bowl with a fork.

  • 0.75 cup chicken broth
  • 0.5 cup coconut aminos or soy sauce
  • 0.25 cup brown sugar
  • 3 or four minced garlic cloves
  • fresh ginger, grated
  • fresh cut green onions

Tips
