Add one and a half cups of minute rice to your baking dish.

Add two cubed chicken breasts (about a pound).

Add one diced red bell pepper.

Add half of a red onion, diced.

Add one 20 ounce can of pineapple tidbits and juice.

Mix all the ingredients in the baking dish together.

For the sauce, start with three quarters of a cup of chicken broth.

Add half a cup of coconut aminos or soy sauce.

Add a quarter cup of brown sugar.

Add three or four minced garlic cloves.

If you have any fresh ginger, grate some into the sauce.

Whisk the sauce ingredients until beautifully combined.

Pour the sauce on top of everything in the baking dish.

Cover the whole thing with foil.

Throw it in the oven at 425 degrees Fahrenheit for about 50 minutes.

When it comes out of the oven, carefully remove the foil.

Check to make sure there isn't still too much liquid.

If there is too much liquid, put the foil back on and throw it back in the oven.

If you have some fresh cut green onions, sprinkle them on top.

Serve in a bowl with a fork.

0.5 cup coconut aminos or soy sauce
0.25 cup brown sugar
3 or four minced garlic cloves
fresh ginger, grated
fresh cut green onions

Tips
If there's too much liquid after the initial baking, cover again with foil and return to the oven.
