6Add one teaspoon of strawberry extract to the mixture and mix well.
7Scrape any excess divinity off the mixer beater and put it back into the bowl.
8Add one and a half cups of chopped pecans to the mixture and stir them in.
9Continue stirring the mixture until it cools down and thickens, and its finish changes from glossy to slightly matte.
10Once the mixture is thick and ready to lay out, add one cup of quartered and dried candied cherries.
11Stir the cherries into the mixture until well combined.
12Using two spoons, scoop out portions of the divinity onto freezer paper, ensuring each portion holds its shape and falls minimally.
13If a portion does not set, scrape it back into the bowl, stir it a bit more, and then try laying it out again.
14Allow the laid-out divinity to dry for one to two hours before packaging.
