3Thinly slice red onions using a mandoline slicer.
4Put the sliced onions in a bowl and add salt to help them release their water.
5Prepare the burger sauce by combining mayonnaise, hot sauce, mustard, spice mix (red chili flakes, garlic powder, oregano, parsley flakes, salt, black pepper), finely chopped pickles, and ketchup.
6Toast the burger buns in a pan.
7Spread the burger sauce on the toasted buns.
8Slice the tomatoes.
9Place a beef ball on a medium-high heat pan.
10Place the sliced onions on top of the beef ball.
11Cover the beef and onions with parchment paper and smash it down with a spatula or burger press.
12Season the patty with the spice mix.
13Flip the patty once.
14Add a slice of cheese on top of the cooked patty.
15Once the cheese is melted, assemble the burger with lettuce, tomato, and the patties.

Tips
Never wash the meat after grinding — wash it before, not after.
Use a steel pan for that perfect crust.
Don’t overcook — just 2 minutes on high heat and you’re golden.
