Directions

  1. 1Add about a fourth cup of avocado oil to a pot.
  2. 2Add two finely chopped onions to the pot.
  3. 3Sauté the onions until they turn a nice golden color.
  4. 4Add two pounds of lamb or beef to the pot, aiming for a light char on both sides.
  5. 5Add one cinnamon stick, four cardamoms, one tablespoon of grated garlic, two teaspoons of grated ginger, and two tablespoons of tomato paste or pepper paste to the meat.
  6. 6Cook down the tomato paste and add all the listed spices: 1 tsp chili powder, 1 tsp coriander, 1 tsp cumin, 1/2 tsp black pepper, 1/2 tsp black cardamom, 1/4 tsp ground clove, 1/4 tsp ground ginger, 1/4 tsp ground fennel seeds, 1/4 tsp ground cinnamon, and salt to taste.
  7. 7Continue mixing for about a minute.
  8. 8Add six cups of water to the mixture.
  9. 9Cover the pot and cook on medium heat for two hours until the meat is fully cooked.
  10. 10After two hours, add two chopped potatoes, half a bunch of cilantro, two Thai chili peppers, and three cups of rice to the pot.
  11. 11Add about six cups of water to the pot for the rice.
  12. 12Cover the pot again and cook on medium heat for 20 minutes, then on low heat for another 20 minutes.
  13. 13Prepare the salsa by adding two garlic cloves, one Thai chili pepper, one tomato, and one fourth bunch of parsley to a blender.
  14. 14Add a dash of salt to the blender.
  15. 15Blend the salsa ingredients together until combined.
  16. 16Garnish the Kabsa with cilantro and serve with the prepared salsa.

Tips

  • You can garnish with whatever you like. My personal favorite is some cilantro and some Yemeni salsa we call sahawat. Super simple to make.
  • If you have a pressure cooker, you can use 4 cups of water instead of 6 cups, and pressure cook it to save time.
  • For the three cups of rice, you're going to want to have about 6 cups of water.
