2Slice off the tips of the garlic bulbs to expose the cloves, drizzle with a little oil, and individually wrap them in foil.
3Make very thin slices along the potatoes, ensuring not to slice all the way through so they stay intact.
4Place the potatoes in a large mixing bowl with 3 tbsp of olive oil, 1/2 tsp of salt, and 1/4 tsp of black pepper, and toss them to coat evenly.

14Spread the garlic butter mixture generously all over the hot, crispy potatoes, ensuring it seeps into the cracks.
Ensure you don't slice all the way through the potatoes.
The potatoes and garlic should finish cooking at the same time; if potatoes cook faster, remove them and return for a few minutes to crisp up when garlic is done.
Don’t rush the slow roasting of the garlic.
Use kitchen roll or a towel to protect your fingers when squeezing hot garlic.
There should be plenty of butter, so don't hold back when spreading it over the potatoes.
