Easy Chocolate Pie

Directions

  1. 1Preheat oven to 400°F.
  2. 2Use a homemade or store-bought pie shell. If using store-bought, check the instructions.
  3. 3Line the pie shell with parchment paper and add pie weights.
  4. 4Bake for 20 minutes, then remove paper and weights. Bake for another 10-15 minutes until golden and dry.
  5. 5In a medium saucepan, whisk together 1 1/2 cups granulated sugar and 1/2 cup unsweetened cocoa powder.
  6. 6Slowly whisk in 1 1/2 cups of milk, reserving 1/2 cup.
  7. 7Cook over medium-high heat, stirring frequently, until it comes to a simmer.
  8. 8In a bowl, whisk together 4 egg yolks, 3 tablespoons of flour, and 1/2 teaspoon of salt.
  9. 9Whisk in the remaining 1/2 cup of milk.
  10. 10Cube 1/4 cup of unsalted butter.
  11. 11Slowly pour the hot chocolate mixture into the egg mixture, whisking vigorously. Use a narrow whisk to reach the edges of the pot to prevent burning.
  12. 12Add 1 teaspoon of vanilla extract and the cubed butter to the chocolate mixture, whisking until melted and combined. If necessary, strain the mixture through a fine-mesh sieve.
  13. 13Pour the chocolate filling into the cooled pie crust and smooth the top with a spatula.
  14. 14Chill the pie in the refrigerator.
