High Protein Chipotle Beef Quesadillas

Directions

  1. 1Add lean ground beef in batches to a pan on high heat with some cooking spray.
  2. 2Let the beef get a crispy sear, then break it up.
  3. 3Add chipotle seasoning and mix well to coat the beef.
  4. 4Set the beef aside.
  5. 5Add sliced onion with a pinch of salt to the pan.
  6. 6Cook onions till soft and browned and add them into the beef.
  7. 7On a warm tortilla, add your creamy chipotle sauce.
  8. 8Load your beef on top with some herbs and mozzarella.
  9. 9Fold the tortilla over.
  10. 10Toast in the pan till crispy and golden.
  11. 11Store them wrapped in the freezer.
  12. 12Reheat when you're ready to eat.

  • 4 tbsp light mayo
  • 0.33 cup tomato sauce
  • 1 tsp chipotle paste
  • 1 tsp honey
  • 1 tsp garlic powder
  • 1 tsp parsley
  • 0.5 lime juice
  • 1 pinch salt
  • 1 splash water
  • 6 low carb tortilla
  • 300 g mozzarella
  • fresh cilantro or parsley

Tips

  • Let ground beef get a crispy sear in batches.
