Season the short ribs with salt and pepper.

Place the short ribs in a pan with oil.

Add sliced onions to the pan.

Mix honey, miso, and stock in a bowl.

Pour the mixture over the short ribs and onions in the pan.

Cover the pan with aluminum foil.

Place the pan in the oven and cook until the ribs are tender.

Slice the potatoes thinly using a chopper.

Add eggs, sour cream, and chives to a bowl.

Whisk the mixture until combined.

Add grated cheese and sliced potatoes to the egg mixture.

Mix everything together by hand.

Line a cake tin with baking paper and press the potato mixture into it.

Cover the cake tin with aluminum foil.

Bake the potato cake until cooked through.

Remove the foil and sprinkle parmesan cheese on top.

Bake again until golden brown.

Remove the potato cake from the tin and sprinkle with salt.
