Lemon Cake in a Blender

Serves 6

Directions

  1. 1Preheat your oven to 350°F (180°C). Grease and cover in parchment paper a 7 inch (18 cm) cake pan.
  2. 2Wash the lemon thoroughly, remove the extremities at the top and the bottom where the zest tends to be a bit hard. Remove all the seeds. Cut it into pieces and put it in the blender.
  3. 3To the blender, add sugar, vegetable oil, milk, eggs and vanilla extract.
  4. 4Blend the ingredients until you achieve a smooth, orange-infused mixture and then sift in the powders (flour and baking powder). Blend for a short amount of time to quickly incorporate the powders without over mixing too much.
  5. 5Pour the batter into the prepared cake pan.
  6. 6Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Allow the cake to cool down and then decorate it with icing sugar.

  • 1 seedless lemon
  • 250 g flour
  • 3 eggs
  • 220 g sugar
  • 16 g baking powder
  • 90 ml vegetable oil
  • 80 ml milk
  • 2 tsp vanilla extract
