Directions

  1. 1Spread two cans of refried beans into the bottom of a dish.
  2. 2Warm two blocks of cream cheese in the microwave until easy to spread.
  3. 3Mix the warmed cream cheese with one to two packets worth of taco seasoning, or homemade taco seasoning, leaning towards two for a spicier dip.
  4. 4Spread the cream cheese and taco seasoning mixture over the refried beans.
  5. 5Add the veggie layer by spreading one can of fire-roasted Rotel (without all the juice) on top, or add other desired vegetables like black olives, pico, cilantro, or jalapeños.
  6. 6Cover the veggie layer with cheese.
  7. 7Cook the dip in the microwave for 10 minutes, checking if it's bubbly, and possibly extending the time if needed.
  8. 8Alternatively, cook in the oven at 350 degrees Fahrenheit until heated through and the cheese on top is bubbly.

Ingredients

  • 2 cans of refried beans
  • 2 blocks of cream cheese
  • 2 taco seasoning (packets worth)
  • 1 can of fire roasted Rotel

Tips

  • You can add a layer of taco meat (chicken, ground beef, or fajitas) and serve with tortillas to turn this dip into more of a meal.
  • Customize the veggie layer with black olives, pico, cilantro, or extra jalapeños.
  • When cooking in the microwave, start with 10 minutes and check for bubbling; it may need a bit longer.
  • When cooking in the oven, preheat to 350 degrees Fahrenheit and cook until everything is heated through and the cheese is bubbly.
  • Serve with Fritos, tortilla chips, or warm tortillas.
