Mango Habanero Chicken Tenders

Directions

  1. 1Cover chicken tenders with flour and Honey Killer Bee spice rub, then mix and let dry.
  2. 2In a large bowl, mix 1 cup of flour, 2 tablespoons of Honey Killer Bee spice rub and 1 teaspoon of baking powder.
  3. 3Transfer a quarter of the flour mix to another bowl and add 1 cup of cold sparkling water, whisk until thin and bubbly.
  4. 4Dip the chicken into the wet batter, then into the dry flour mixture, then back into the wet batter, and finish in the dry flour mixture.
  5. 5In a blender, mix 2 habaneros, 2 garlic cloves, 1 tablespoon of brown sugar, juice from 1 lime, 1 cup of mango pulp, 1 bottle cap of vinegar, and some seasoning.
  6. 6Blend until smooth.
  7. 7Heat oil to 350 and fry the chicken for 5-7 minutes, rest for a few minutes, then fry for 1 more minute until golden.
  8. 8Sprinkle salt on the fried chicken and add the mango habanero sauce.
