Directions

Simply put any flour, bit of salt, bit of oil into a bowl, then we're going to add in some boiling water.

Mix this together into a dough.

Knead this for a couple of minutes until it's smooth.

Then give the dough a rest while you have a little piano break.

Divide up the dough, roll into balls, then roll out nice and thin.

Get your largest pan hot enough so that water sizzles off the surface.

Cook the tortilla, takes about 45 seconds on one side.

You know it's time to flip when you can see loads of bubbles forming.

You should cook it for 30 seconds on the other side.

Put it on a plate and then just cover it with a tea towel while you cook the rest to keep it nice and soft.

240 g strong white bread flour
1 pinch salt
3 tbsp olive oil
120 ml boiling water

Tips
Rest the dough properly for at least 30 minutes, or up to an hour, to make them easier to roll out.
Do not over flour your work surface; sprinkle only a little when rolling the dough.
Roll the tortillas thin and cook them on a hot pan.
