High Protein Cheeseburger Hot Pockets

Directions

  1. 1To a bowl, add all-purpose flour and 0% greek yogurt.
  2. 2Mix until you get doughy clumps.
  3. 3Knead the clumps into a big dough ball.
  4. 4Divide the dough ball into 8 equal balls.
  5. 5To a hot pan with some cooking spray, add lean ground beef.
  6. 6Let it get a crispy sear.
  7. 7Add diced onion, smoked paprika, garlic powder, salt, and pepper.
  8. 8Mix well.
  9. 9Add beef stock, light cream cheese, ketchup, mustard, and diced pickles.
  10. 10Mix until nice and creamy.
  11. 11Roll out a dough ball.
  12. 12Add 1/8 of the cheeseburger beef and low-fat cheese.
  13. 13Fold in the sides, pinch to seal, flip it over, and press down gently.
  14. 14Repeat for the other 7 dough balls.
  15. 15Place them in a pan with some cooking spray, cover with a lid, and cook for 3-4 minutes on each side until golden and crispy.
  16. 16Store them wrapped in the freezer and reheat when ready to eat.
