Carrot Cake
Directions
- 1Preheat oven to 180 degrees Celsius.
- 2Prepare cake tin by spraying with baking spray.
- 3Cream together 1 cup of sugar, 1 cup of oil, and 3 eggs.
- 4Sift in 1 ½ cups of cake wheat flour, 10ml baking powder, 10ml cinnamon, and 5ml bicarbonate of soda.
- 5Mix until smooth.
- 6Add 1 ½ cups of grated carrots, ½ cup of mashed bananas, and ½ cup of finely chopped pecans.
- 7Mix well.
- 8Pour batter into prepared cake tin.
- 9Bake for 50 minutes.
- 10Let the cake cool down.
- 11Make the icing by mixing 100ml of cream cheese, 1 ½ cups of icing sugar, 110ml of butter/margarine, and 6ml of vanilla extract.
- 12Once the cake is fully cooled, decorate with icing and chopped pecans.
