Smashed Gyozas

Directions

  1. 1Slice 4 scallions and add to a bowl.
  2. 2Mince a handful of garlic cloves and add to the bowl.
  3. 3Grate some ginger and add to the bowl.
  4. 4Season with 1 tsp of white pepper.
  5. 5Add 2 tsp of cornstarch.
  6. 6Add 2 tsp of sugar.
  7. 7Add 1 tsp of chicken powder.
  8. 8Add 2 tbsp of soy sauce.
  9. 9Mix in about a pound of ground pork.
  10. 10Microwave a small amount to taste for seasoning.
  11. 11Adjust seasoning by adding more soy sauce, white pepper, and chicken powder as needed.
  12. 12Continue mixing until the meat gets a little sticky and tacky.
  13. 13Thaw some pre-made dumpling wrappers.
  14. 14Dip each wrapper in some cornstarch to prevent sticking.
  15. 15Spread a generous amount of the filling onto each wrapper and set aside.
  16. 16Heat a nonstick skillet to medium-high.
  17. 17Press each dumpling onto the pan, meat-side down.
  18. 18Use a spatula to flatten and spread the meat like a smash burger.
  19. 19Once browned, flip and fry the dumpling wrapper in the rendered pork fat.
  20. 20To serve, fold like a taco.
  21. 21Drizzle on your favorite dumpling sauce and enjoy.
