1Preheat oven to 425°F and line a baking sheet with parchment paper.
2On the prepared baking sheet, toss the broccoli florets with the oil, garlic, salt, and pepper.
3Spread the broccoli in a single layer and roast in the oven until the edges are golden and lightly browned and the stems are crisp-tender, about 14-18 minutes.
4Sprinkle with freshly grated parmesan if using and serve right away.

1.5 pounds broccoli (1 head), cut into medium florets
3 Tbsp olive oil
3 garlic cloves, minced, or garlic powder
1/2 tsp fine sea salt, or more to taste
1/4 tsp pepper, or to taste
2 Tbsp freshly grated parmesan, to serve, optional
Tips
Rinse the broccoli under cold running water then pat dry thoroughly to help it crisp up in the oven.
To use the stems – You can roast the broccoli stem as well, just be sure to use a vegetable peeler to remove the fibrous outer layer on the stem first, or it will be too tough to chew. Chop the stem into bite-size pieces.
For variations, consider adding Everything Bagel Seasoning, toasted almonds, fresh lemon juice, bacon, red pepper flakes, or balsamic glaze.
