1Make the berry topping: In a saucepan, add the mixed berries and sweetener. Set it over high heat and bring it to a simmer. Once simmering, mix it and reduce the heat to medium-low for 15 minutes. After 15 minutes, turn off the heat, add a splash of Mexican vanilla blend and allow to cool down.
2Make the chia pudding: In a glass jar, mix 1 cup of coconut milk, 1 tbsp of sweetener, and 1 tsp vanilla extract.
3Add 1/4 cup of chia seeds and mix well.
4Cover and refrigerate for at least four hours. The longer the better.
5Transfer the chia pudding to a bowl, top it with the berry topping, fresh berries (blueberries and strawberries), granola, and coconut flakes.
