Let the panko breadcrumbs soak up the milk for a minute or two.
Add diced shallot and garlic cloves.
Add diced green onion (light ends).
Add grated carrot.
Add grated ginger (about a quarter teaspoon).
Add ground pork.
Add a couple of tablespoons of soy sauce.
Add an egg.
Add a little bit of salt and some black pepper.
Mix until well combined and an even consistency.
Roll the mixture into small balls (about this big).
Line them up on a sheet pan.
Bake these at 450 degrees Fahrenheit for about 15 minutes.
Add hoisin sauce to a pan.
Add rice wine vinegar.
Add three cloves of garlic.
Add ginger (about the same amount as in the meatballs).
Add a little bit of sesame oil (about a teaspoon).
Add three to four tablespoons of soy sauce.
Add some chili flakes if you like it spicy.
Pop the sauce mixture on the stove until it comes to a simmer and thickens up.
Toss the meatballs into the sauce.
Give it a mix.
Serve meatballs with some rice, steamed broccoli, and crispy air-fried brussels sprouts tossed in some of the sauce and a little bit of extra vinegar.
Top with crispy onions for a bit of crunch.
Garnish with the green part of the green onions to brighten things up.
