Homemade English Muffins

Directions

  1. 1Combine yeast, warm evaporated milk, and honey in a stand mixer bowl and whisk together.
  2. 2Let the mixture set to proof.
  3. 3Add flour, salt, egg, and melted butter to the bowl.
  4. 4Mix until the dough pulls away from the bowl.
  5. 5Place the dough into a greased bowl and cover with a cloth to let rise until doubled in size.
  6. 6Turn the dough out onto a lightly floured surface, knead 5 to 6 times, and roll out to 3/4 inch thickness.
  7. 7Cut into circles using a glass.
  8. 8Place the dough circles on a cookie sheet and sprinkle with cornmeal.
  9. 9Cover and let rise until doubled in size.
  10. 10Heat a cast iron pan over the stove without oil.
  11. 11Cook muffins in the hot pan until browned.
