1Prepare the beef mixture: In a pan, melt butter and cook 1 lb ground beef with salt and pepper until browned. Add curry powder and chopped green bell pepper. Mix well.
2Prepare the sauce: In a food processor, combine chopped onion, garlic, ginger, scallions, scotch bonnet peppers, thyme, soy sauce, and oil until smooth.
3Combine the beef and sauce mixtures and simmer until the sauce thickens. Add beef broth and breadcrumbs and stir.
4Prepare the dough: Combine flour, cold butter, cold water, and salt in a food processor until it forms a dough. Knead it on a floured surface.
5Roll out the dough: Sprinkle flour on the surface and roll the dough into a rectangle. Spread cheese, fold, roll again and spread more cheese. Repeat.
6Cut the dough into circles and brush them with egg wash.
7Assemble the patties: Place a portion of the beef mixture onto one half of a circle of dough, fold it over, and seal the edges.
8Bake the patties: Place the patties on a baking sheet and brush with egg wash. Sprinkle with salt and thyme and bake at 350°F (175°C) for 20-25 mins.
