20m
Serves 4

Directions

  1. 1Chop the avocado and parsley.
  2. 2Place salmon on a baking sheet with foil or parchment paper.
  3. 3Season with salt, cumin and pepper and rub the top with olive oil.
  4. 4Broil for about 8 minutes.
  5. 5Combine avocado, parsley, lemon zest and juice, garlic, paprika, cumin and olive oil in a bowl.
  6. 6Toss to coat well.
  7. 7Top the cooked salmon with the avocado salad.

Ingredients

  • 4 6oz salmon filets
  • 0.5 tsp kosher salt
  • 1 tsp cumin
  • 0.5 tsp ground black pepper
  • 1 tsp olive oil
  • 2 avocados
  • 0.5 cup italian parsley, chopped
  • 1 lemon, zested and juiced
  • 2 cloves garlic, mashed
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tb olive oil

Equipment

baking sheetfoilparchment paperoven

Tips

  • Broil the salmon for 8 minutes on the high setting or 10-11 minutes for salmon cooked through.
  • Place under the broiler for 8 minutes on the high setting (I do this on the lower rack in the oven so the parchment paper doesn’t burn).
  • When the salmon comes out of the oven, top with the avocado salad and enjoy immediately.
