Marinate the chicken with salt/turmeric/chilli and coriander powder and set aside for 30 minutes.

Dry roast the ingredients for the powder and powder them.

Heat oil in a kadai and fry the chicken. Once half done, set them aside.

In the same oil, fry the baby potatoes till they are crisp.

In the remaining oil, add whole spices followed by shallots and cook till they are brown.

Add ginger garlic paste once the raw smell goes off.

Add chopped tomato.

Cook the tomatoes till they are mashed, add sufficient salt followed by a pinch of turmeric and a little chilli powder.

Add half cup of water to cook the masala.

Bring back the fried chicken, mix them and add the powdered masala.

Cover and cook till the chicken is well done.

Then add the fried potatoes along with garam masala and chopped coriander leaves.

Now start drying up the masala on a slow heat and the chicken roast with potatoes is ready.

250 gms Chicken curry cut
15 ml Coconut /sesame oil
10 nos Baby potato
Whole spices
1 tsp Ginger garlic paste
10 nos sliced shallots
1 small sized Chopped tomatoes
Salt
0.25 tsp Turmeric powder
0.5 tsp Chilli powder
0.5 tap Garam masala
1 sprig Coriander
2 nos Dry red chilli
0.25 tbsp Cumin
0.33 tbsp Black pepper
1 tsp Coriander seeds
