Directions
- 1Brown the butter in a pan.
- 2Pour the browned butter into a bowl.
- 3Add dark brown sugar, granulated sugar, and salt to the browned butter and mix.
- 4Add an egg, an egg yolk, and vanilla extract to the mixture and whisk until combined.
- 5Add all-purpose flour and baking soda to the mixture and combine to form the cookie dough.
- 6Scoop the cookie dough onto a baking sheet lined with parchment paper.
- 7Prepare the topping by adding all-purpose flour, baking powder, granulated sugar, and butter to a food processor and blending.
- 8Add a salted egg yolk to the cookie dough if desired, then chop it and press it into a disk.
- 9Place the topping onto the scooped cookie dough.
- 10Brush the topping with egg wash.
- 11Bake the cookies until golden brown.

Tips
- Adding salted egg yolks to the cookie dough is optional.
