Whole Roasted Cauliflower with Whipped Tofu Feta, Crispy Chickpeas, and Chimichurri Sauce

Directions
- 1Preheat oven to 400F.
- 2Cut the cauliflower stem.
- 3Boil cauliflower for 10 min.
- 4Make the sauce: mix olive oil, balsamic vinegar, garlic powder, smoked paprika, salt, and pepper.
- 5Coat the cauliflower with the sauce.
- 6Roast the cauliflower in the preheated oven until tender.
- 7Roast the chickpeas with olive oil and turmeric until crispy.
- 8Chop the parsley and garlic.
- 9Make the chimichurri sauce: Blend parsley, garlic, red pepper flakes, olive oil and lemon juice.
- 10Make the whipped tofu feta: Blend tofu, tahini and lemon juice.
- 11Spread the whipped tofu feta on a plate, top with roasted chickpeas, the roasted cauliflower, and chimichurri sauce.

- 1 bunch parsley
- 2 cloves garlic
- 1 pinch red pepper flakes
- 1 block tofu
- 1 tbsp lemon juice
- 2 tbsp tahini
