Loaded Enchilada Casserole

Directions

  1. 1Brown the ground beef, letting it get color on one side before flipping.
  2. 2Use a meat masher to break up the ground beef.
  3. 3Add one packet of taco seasoning to the ground beef.
  4. 4Stir in 12 oz of queso until creamy, then set aside.
  5. 5Spread red enchilada sauce at the bottom of a 9x13 Pyrex deep dish.
  6. 6Arrange 8 frozen chicken taquitos across the dish.
  7. 7Gently slide in 8 more frozen chicken taquitos at the bottom.
  8. 8Add a little more enchilada sauce over the taquitos.
  9. 9Spread the taco meat and queso mixture over the taquitos.
  10. 10Evenly spread 2 cups of shredded jalapeno cheddar cheese over the meat and queso.
  11. 11Cover the dish and bake in the oven at 375°F for about an hour.
  12. 12After baking, if desired, remove any grease from the top.
  13. 13Top the casserole with the entire bag of Chili Cheese Fritos.

  • 2 cups jalapeno cheddar cheese
  • 1 bag Chili Cheese Fritos

Tips

  • Use pre-shredded cheese if desired, but jalapeno cheddar melts better.
  • Optionally remove grease from the top after baking.
