Crockpot Cream Cheese Chicken Chili

Directions

  1. 1Drain a can of black beans and a can of sweet corn.
  2. 2Add the drained black beans and sweet corn to your crock pot.
  3. 3Throw in a can of Ro-Tel tomatoes.
  4. 4Add a tablespoon of chili powder.
  5. 5Add a teaspoon of cumin.
  6. 6Add a teaspoon of onion powder.
  7. 7Add one Ranch packet.
  8. 8Stir everything well until combined.
  9. 9Place two large chicken breasts into the mixture, nestling them gently.
  10. 10Sprinkle about half a packet of taco seasoning on top of the chicken.
  11. 11Grab a brick of cream cheese and cut it in half, then place the halves in the crock pot.
  12. 12Throw the lid on the crock pot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  13. 13Remove the chicken from the crock pot and place it in a bowl.
  14. 14Shred the chicken using a hand mixer or other shredding tool.
  15. 15Add the shredded chicken back to the crock pot.
  16. 16Mix everything really well until all the cream cheese is incorporated.
  17. 17Serve the chili in a bowl.
  18. 18Add a dollop of sour cream on top.
  19. 19Sprinkle some cheese on top.
