Directions

  1. 1Grab your blender and toss in the onions, a handful of chillies, zesty lime zest, and a peeled lime.
  2. 2Don't forget the garlic cloves, add salt, smoked paprika, dried oregano, thyme, tomato paste, brown sugar, white vinegar, and oil.
  3. 3Blend it all into a smooth, vibrant marinade.
  4. 4Now take the chicken thighs, pour that marinade all over the chicken, making sure each piece is perfectly coated, and let those flavors mingle for at least a few hours.
  5. 5Time to preheat your oven.
  6. 6Arrange chicken thighs on a wire rack upside down, bake for 45 minutes or until tender.
  7. 7Remember to flip halfway and brush some marinade.
  8. 8Meanwhile, let's prepare the rice.
  9. 9Rinse the rice thoroughly, then soak it.
  10. 10In a large pot, heat some oil, add the onions and colorful bell peppers, sauté until the onion turns translucent.
  11. 11Now stir in that soaked rice, pour in that delicious reserved marinade and this is totally optional, add some chicken seasoning.
  12. 12Pour water, bring it to boil, then cover and let it simmer until all water is absorbed and the rice is tender.
  13. 13Once the rice is ready, fluff it up and top with those beautifully baked chicken thighs.
  14. 14And for that extra kick, squeeze fresh lemon juice right over the chicken.
