Directions

  1. 1Pour one cup of chilled milk into a bowl.
  2. 2Add three quarters of a cup of boiling water.
  3. 3Mix the ingredients.
  4. 4Add one tablespoon of yeast.
  5. 5Add one tablespoon of sugar.
  6. 6Add four tablespoons of oil.
  7. 7Stir well and let sit for 15 minutes.
  8. 8Add four cups of flour.
  9. 9Add one and a half teaspoons of salt.
  10. 10Gently mix together.
  11. 11Add more flour as needed.
  12. 12Place dough in a bowl and cover it with a tea towel, leave it for an hour to rise.
  13. 13Oil the bench and put the dough on it.
  14. 14Pat out the dough into a rectangle.
  15. 15Use a dinner plate to divide the dough into even square sizes.
  16. 16Separate them so they don't stick together, and cover them with a tea towel.
  17. 17Wear a shower cap.
  18. 18Fry in hot oil until golden brown.
  19. 19Place in paper towels and serve.

  • 0.75 cup boiling wai
  • 1 Tbspn īhi
  • 1 Tbspn huka
  • 4 Tbspn hinu
  • 4 cups puehu parāoa
  • 1.5 tsp tote
  • oil

Tips

  • Mix all ingredients except flour and salt in a large bowl.
  • Leave for 15 minutes
  • Add flour and salt (start with 4 cups, and add more if it’s too sticky), gently combine, knead for a few minutes, then rest 1 hour, or until doubled in size.
  • Lightly oil the bench, then press out dough and divide into squares by rolling a plate along it.
  • Fry in hot oil till puffed + golden.
  • Transfer to a dish lined with paper towels.
