Shred the carrots.

Place the raisins in a bowl.

Open and drain the crushed pineapple, letting the juice fall onto the raisins to plump them up.

Crush the walnuts or pecans using a food processor.

Add granulated sugar, brown sugar, and vegetable oil to a large bowl.

Add cinnamon and vanilla extract.

Crack in four eggs.

Mix the wet ingredients well with a hand mixer.

Add all-purpose flour, baking powder, and baking soda to the bowl.

Mix again until partially combined, but still with some flour visible.

Add the shredded carrots and fold them into the cake mix.

Add the drained pineapple and fold it in nicely.

Add the plumped raisins and give one last fold.

Pour the cake batter into a 9x13 inch baking dish.

Bake in the oven at 350 degrees Fahrenheit for 45 to 55 minutes.

For the icing, combine two blocks of cream cheese and half a cup of butter in a bowl.

Mix well with a hand mixer until creamy.

Add two teaspoons of vanilla extract and two tablespoons of heavy cream or milk.

Add approximately three cups of icing sugar.

Start mixing the icing with a fork to avoid a mess before using the hand mixer.

Add about half of the crushed walnuts to the icing and gently fold them in.

Once the cake is cooled, spread the cream cheese icing on top.

Garnish the top of the cake with the remaining crushed walnuts.

Tips
Do all prep work first to make the recipe feel less overwhelming.
If you don't like raisins, leave them out along with the pineapple juice. Just use drained pineapple.
If you don't want nuts, leave them out; no substitution is needed.
