1Combine water, piloncillo, cinnamon sticks, cloves, and star anise in a Dutch oven or pot and bring to a simmer.
2Stir the mixture to help the piloncillo dissolve.
3Add the ground coffee to the simmering liquid.
4Steep the coffee for 6 minutes for regular strength or 8 minutes for extra-strength.
5Strain the coffee and serve.

Traditionally brewed in an olla de barro (Mexican clay pot) for an earthy flavor, but a Dutch oven can be used as a substitute.
Adjust the level of sweetness by using more or less piloncillo; the creator uses 4 oz for 8 cups of water but suggests half that amount for less sweetness.
