Cut potatoes into 1-inch thick slices.

Toss potatoes with melted butter, olive oil, thyme, salt, and pepper.

Arrange potatoes in a single layer in a baking pan.

Roast potatoes, flipping once, until browned (about 30 minutes).

Whisk grated garlic into broth.

Pour broth mixture over the potatoes.

Sprinkle Parmesan cheese on top.

Continue roasting until the broth is absorbed and potatoes are tender (about 15 more minutes).
