High Protein Apple Cinnamon Bread

Directions

  1. 1Peel and dice two apples, then set them aside.
  2. 2Add oats to a blender and blend them into oat flour.
  3. 3Pour the oat flour into a large bowl.
  4. 4Add vanilla protein powder to the oat flour.
  5. 5Add baking soda to the bowl.
  6. 6Add baking powder to the bowl.
  7. 7Add salt to the bowl.
  8. 8Add cinnamon to the bowl.
  9. 9Mix all the dry ingredients together thoroughly.
  10. 10In a separate measuring cup, add applesauce.
  11. 11Crack two eggs into the measuring cup.
  12. 12Add maple syrup to the wet ingredients.
  13. 13Add milk to the wet ingredients.
  14. 14Add vanilla extract to the wet ingredients.
  15. 15Whisk all the wet ingredients together.
  16. 16Pour the wet ingredients into the dry ingredients.
  17. 17Stir the wet and dry ingredients together until combined and no clumps remain.
  18. 18Add almost all of the diced apples to the batter, saving about half a cup for topping.
  19. 19Fold the diced apples into the batter.
  20. 20Pour the batter into a baking container lined with parchment paper.
  21. 21Optionally, swirl some almond butter on top of the batter.
  22. 22Sprinkle the remaining diced apples on top of the batter.
  23. 23Bake in a preheated oven at 375°F (190°C) for 35-40 minutes until golden brown.
