Crock Pot Cream Cheese Chicken Chili

Directions

  1. 1Add one can of drained black beans and one can of sweet corn to the crockpot.
  2. 2Add one can of Ro-Tel tomatoes to the crockpot.
  3. 3Add one tablespoon of chili powder to the crockpot.
  4. 4Add one teaspoon of cumin to the crockpot.
  5. 5Add one teaspoon of onion powder to the crockpot.
  6. 6Add one packet of ranch dip mix to the crockpot.
  7. 7Stir all the ingredients in the crockpot to mix them thoroughly.
  8. 8Place two large chicken breasts into the mixture in the crockpot, nestling them in gently.
  9. 9Sprinkle about half a packet of taco seasoning over the chicken breasts. The cook used hot taco seasoning, but you can use regular if you prefer.
  10. 10Cut a brick of cream cheese in half and place the halves on top of the mixture in the crockpot.
  11. 11Put the lid on the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  12. 12Once cooked, remove the chicken breasts from the crockpot and place them in a bowl.
  13. 13Use a hand mixer to shred the cooked chicken.
  14. 14Add the shredded chicken back into the crockpot with the chili mixture.
  15. 15Stir everything together in the crockpot until the cream cheese is fully mixed in and all ingredients are combined.
  16. 16Serve a portion of the chili in a bowl.
  17. 17Add a dollop of sour cream and a sprinkle of shredded cheese on top of the chili.
