Directions

Cut the ribs in two parts for easy manipulation.

Mix the pimentón, garlic powder, onion powder, pepper, sugar and salt in a bowl.

Cover the ribs with the mixture.

Wrap the ribs in aluminum foil.

Place ribs in an oven tray.

Bake for 90 minutes at 150ºC.

Put ketchup, brown sugar, mustard and apple vinegar in a pot.

Add hot sauce to taste.

Heat in low heat and remove a little until everything is disolved.

Open the aluminum foil and paint the ribs with the barbecue sauce on the bone side.

Bake for 15 minutes at 180ºC.

Turn them, brush them on the other side and bake for 5 minutes.
Ingredients
1 kg costilla de cerdo
1 cdta. pimentón de la Vera picante
1 cdta. ajo en polvo
1 cdta. cebolla en polvo
2 cdtas. pimienta negra molida
1 cdta. azúcar moreno
2 cdtas. sal
100 g ketchup
50 g azúcar
1 cda. mostaza
3 cdas. vinagre de manzana
salsa picante

Tips
Remove the thin membrane over the ribs.
Ask the butcher to remove the membrane or remove it yourself.
If you don't remove it the ribs will curl in the oven.
Massage the ribs with the mix of species.
Be generous with the sauce.
