Directions

  1. 1Cut the ribs in two parts for easy manipulation.
  2. 2Mix the pimentón, garlic powder, onion powder, pepper, sugar and salt in a bowl.
  3. 3Cover the ribs with the mixture.
  4. 4Wrap the ribs in aluminum foil.
  5. 5Place ribs in an oven tray.
  6. 6Bake for 90 minutes at 150ºC.
  7. 7Put ketchup, brown sugar, mustard and apple vinegar in a pot.
  8. 8Add hot sauce to taste.
  9. 9Heat in low heat and remove a little until everything is disolved.
  10. 10Open the aluminum foil and paint the ribs with the barbecue sauce on the bone side.
  11. 11Bake for 15 minutes at 180ºC.
  12. 12Turn them, brush them on the other side and bake for 5 minutes.

  • 1 kg costilla de cerdo
  • 1 cdta. pimentón de la Vera picante
  • 1 cdta. ajo en polvo
  • 1 cdta. cebolla en polvo
  • 2 cdtas. pimienta negra molida
  • 1 cdta. azúcar moreno
  • 2 cdtas. sal
  • 100 g ketchup
  • 50 g azúcar
  • 1 cda. mostaza
  • 3 cdas. vinagre de manzana
  • salsa picante

Tips

  • Remove the thin membrane over the ribs.
  • Ask the butcher to remove the membrane or remove it yourself.
  • If you don't remove it the ribs will curl in the oven.
  • Massage the ribs with the mix of species.
  • Be generous with the sauce.
