Directions

  1. 1Melt butter in a large deep pot, then add milk, condensed milk, and caster sugar. Stir frequently over low heat for 30 to 35 minutes until the mixture darkens and resembles the surface of the moon.
  2. 2Add vanilla essence and continue to stir until thickened.
  3. 3Transfer the mixture to a stand mixer with a balloon whisk attachment or use a hand whisk and beat for 5 minutes until it thickens further and pulls away from the sides of the bowl.
  4. 4Spread the mixture into a flat tray, preferably with a loose bottom, and press down with the back of a spoon to smooth and compact.
  5. 5Leave to set for at least 1 hour, then cut into squares.

Ingredients

  • 900 g caster sugar
  • 370 g condensed milk
  • 1 tsp vanilla essence
  • 150 ml whole milk
  • 125 g unsalted butter

Tips

  • Do not walk away while cooking; keep stirring to prevent burning due to the high sugar content.
  • You can add a small amount of cinnamon for a different flavor profile.
  • If you don't have a stand mixer, a hand whisk works fine.
  • For a glazed top, smooth the surface with a palette knife dipped in boiling water.
  • Use a loose-bottom tray to make it easy to remove and cut the tablet once set.
