Black Eyed Peas

1h 30m
Serves 1

Directions

  1. 1First, you're going to use an Instant Pot.
  2. 2Start with the black eyed peas. You do not even have to soak them overnight. You can just put them straight from the bag into the Instant Pot.
  3. 3Cut the bag and pour all the black eyed peas into the Instant Pot.
  4. 4Add two ham hocks. These will give a great smoky flavor.
  5. 5Add the ham steak. This is going to be the meat of the dish.
  6. 6Add the bones in there, too.
  7. 7Add one chopped onion.
  8. 8Add one chopped carrot.
  9. 9Add a little bit of chunky garlic.
  10. 10Add about one tablespoon of salt.
  11. 11Add about one tablespoon of crushed oregano.
  12. 12Add some fresh cracked pepper.
  13. 13Add a little beef bouillon (about one tablespoon).
  14. 14Add about four bay leaves (if you have big ones, just put two).
  15. 15Add regular tap water, just enough to cover everything that is in the Instant Pot.
  16. 16Stir everything well.
  17. 17Close the Instant Pot.
  18. 18Set the Instant Pot for an hour and a half on high pressure.
  19. 19Let it do a natural release, and when it's done, it will come out perfect.
  20. 20Open the Instant Pot. The broth smells amazing, the beans plumped up, the ham is tender and the hocks are falling apart.
  21. 21Serve and enjoy!
