Directions

  1. 1Prepare the chicken seekh by chopping onions and green chilies in a chopper.
  2. 2Add minced chicken, chili flakes, cumin seeds powder, garam masala powder, and bread crumbs to the chopper and mix well.
  3. 3Add fresh cream and salt, then mix everything together using the chopper.
  4. 4Shape the mixture into seekh kebabs using a pencil or skewer sticks.
  5. 5Lightly fry the seekh kebabs in a grill pan with some oil until they turn golden.
  6. 6Prepare the gravy by frying chopped onions, cashew nuts, and green chilies in a pan until the onions turn pinkish and soft.
  7. 7Add coriander leaves and mix well.
  8. 8Cool the mixture and blend it into a paste using a grinder.
  9. 9In a separate pan, melt butter and add green cardamom, cloves, and ginger garlic paste. Sauté until the raw smell of ginger garlic goes away.
  10. 10Add the blended paste, white pepper powder, black pepper powder, cumin seeds powder, chat masala, and garam masala powder. Sauté for 2-3 minutes.
  11. 11Reduce the flame to low, add beaten yogurt and salt, and mix well.
  12. 12Cover and cook for 4-5 minutes.
  13. 13Add the fried seekh kebabs to the gravy, sprinkle with dried fenugreek leaves and mix gently.
  14. 14Add half a cup of fresh cream and mix well.
  15. 15Cover and simmer for 5-6 minutes on medium to low flame.
  16. 16Remove the lid, add lemon juice and chopped coriander leaves, mix well, turn off the flame.
