Slice the onion down from the root.

Turn it around and slice the top.

Gently peel the onion, including taking off the membrane if you can find it.

Slice the onion in half.

Separate the onion into rings.

Cover the onion rings in buttermilk.

Splash the onions with a little hot sauce.

Add garlic powder, smoked paprika, and chipotle chili powder to the buttermilk mixture.

Very carefully mix the onions in the buttermilk mixture, trying not to break them.

In a separate bowl, combine all-purpose flour and cornstarch (about 30-40% cornstarch).

Add the same seasonings (garlic powder, smoked paprika, chipotle chili powder) to the flour mixture.

Allow the buttermilk-coated onions to drip off excess moisture.

Instantly throw the onions into the flour mixture and coat them.

Go back into the wet batter.

Gently and carefully toss the coated onions into Panko breadcrumbs.

Very carefully toss the onion rings into hot oil set at 350°F (175°C).

Fry for about 4 minutes until golden brown.

Hit them with a little bit of flaky salt.
