Onion Rings

Directions

  1. 1Slice the onion down from the root.
  2. 2Turn it around and slice the top.
  3. 3Gently peel the onion, including taking off the membrane if you can find it.
  4. 4Slice the onion in half.
  5. 5Separate the onion into rings.
  6. 6Cover the onion rings in buttermilk.
  7. 7Splash the onions with a little hot sauce.
  8. 8Add garlic powder, smoked paprika, and chipotle chili powder to the buttermilk mixture.
  9. 9Very carefully mix the onions in the buttermilk mixture, trying not to break them.
  10. 10In a separate bowl, combine all-purpose flour and cornstarch (about 30-40% cornstarch).
  11. 11Add the same seasonings (garlic powder, smoked paprika, chipotle chili powder) to the flour mixture.
  12. 12Allow the buttermilk-coated onions to drip off excess moisture.
  13. 13Instantly throw the onions into the flour mixture and coat them.
  14. 14Go back into the wet batter.
  15. 15Gently and carefully toss the coated onions into Panko breadcrumbs.
  16. 16Very carefully toss the onion rings into hot oil set at 350°F (175°C).
  17. 17Fry for about 4 minutes until golden brown.
  18. 18Hit them with a little bit of flaky salt.
