Directions

  1. 1Chop the potatoes into cubes and place into a bowl.
  2. 2Spray potatoes with some oil, then season with smoked paprika, garlic powder, cumin and salt.
  3. 3Transfer potatoes to your air fryer and cook at 200 degrees Celsius for 20 minutes, shaking halfway.
  4. 4Dice the tomatoes and red onion.
  5. 5Place diced tomatoes and red onion into a bowl and mix with chopped fresh coriander, lime juice, and salt to make the salsa.
  6. 6For the sauce, mix the yogurt, sour cream, chipotle paste, lime, garlic powder, onion powder, smoked paprika, and salt.
  7. 7Place the sauce into the fridge to chill.
  8. 8Heat a pan over medium-high.
  9. 9Add a little oil, then the mince, and cook for 4-5 minutes, breaking it up until you get some color on the beef.
  10. 10Stir in chipotle paste, tomato paste, cumin, paprika, grated garlic, salt and pepper.
  11. 11Cook for 1 minute.
  12. 12Add the water and cook for another minute.
  13. 13Finish with a squeeze of lime juice.
  14. 14Serve the chipotle beef with the crispy potatoes and salsa on the side.
  15. 15Drizzle the sauce on top and garnish with fresh coriander.

Tips

  • Scoop out tomato seeds to prevent salsa from becoming watery.
