Chop the potatoes into cubes and place into a bowl.

Spray potatoes with some oil, then season with smoked paprika, garlic powder, cumin and salt.

Transfer potatoes to your air fryer and cook at 200 degrees Celsius for 20 minutes, shaking halfway.

Dice the tomatoes and red onion.

Place diced tomatoes and red onion into a bowl and mix with chopped fresh coriander, lime juice, and salt to make the salsa.

For the sauce, mix the yogurt, sour cream, chipotle paste, lime, garlic powder, onion powder, smoked paprika, and salt.

Place the sauce into the fridge to chill.

Heat a pan over medium-high.

Add a little oil, then the mince, and cook for 4-5 minutes, breaking it up until you get some color on the beef.

Stir in chipotle paste, tomato paste, cumin, paprika, grated garlic, salt and pepper.

Cook for 1 minute.

Add the water and cook for another minute.

Finish with a squeeze of lime juice.

Serve the chipotle beef with the crispy potatoes and salsa on the side.

Tips
Scoop out tomato seeds to prevent salsa from becoming watery.
Add milk to the sauce to loosen it.
