Directions

  1. 1Add sugar and corn syrup to a medium-sized pot.
  2. 2Heat the sugar and corn syrup mixture on medium to medium-low heat until it comes just to a boil.
  3. 3Stir the sugar mixture frequently while it is coming to a boil, ensuring all sugar crystals melt into the corn syrup for a glossy consistency.
  4. 4Measure out the cereal into a large mixing bowl while the sugar mixture is cooking.
  5. 5Keep an eye on the sugar mixture and stir it every once in a while.
  6. 6Measure out the peanut butter while the sugars are still cooking.
  7. 7Once the sugar and corn syrup mixture just comes to a boil, remove it from the heat.
  8. 8Add the peanut butter to the hot sugar and corn syrup mixture.
  9. 9Stir the peanut butter into the sugar and corn syrup mixture until it is all combined and has a nice glossy peanut butter consistency.
  10. 10Pour the peanut butter mixture over all of the cereal in the mixing bowl.
  11. 11Mix the cereal and peanut butter mixture together until all of the cereal is coated, with no dry cereal and no clumps of the peanut butter mixture.
  12. 12Line a 9x13 baking pan with parchment paper and lightly spray it with non-stick cooking spray.
  13. 13Transfer the coated cereal mixture to the prepared baking pan.
  14. 14Spread the cereal mixture out evenly in the pan.
  15. 15Add butterscotch chips and chocolate chips to a pot.
  16. 16Melt the chocolate and butterscotch chips on low heat, stirring constantly to prevent burning.
  17. 17Once the chocolate and butterscotch chips are melted and combined, pour the mixture over the cereal bars.
  18. 18Spread the chocolate-butterscotch topping evenly over the bars.
  19. 19Allow the chocolate to cool and set.
  20. 20Pull the cooled bars out of the pan using the parchment paper.
  21. 21Cut the bars into desired sizes.

Tips

  • If you don't like butterscotch, you can omit the butterscotch chips and double up on the chocolate chips.
  • Do not boil the sugar and corn syrup mixture for too long, as it will make the bars hard instead of chewy.
  • Melt chocolate and butterscotch chips on low heat and stir constantly to prevent burning.
