To a bowl, add 1 can of pumpkin purée, 3/4 cup of white sugar, 1 cup and a half of brown sugar.

Add 3 whole eggs and whisk until fully combined.

Add some vanilla extract.

Add 1 and a half sticks of unsalted butter.

Add a splash of vegetable oil and whisk again, then set aside.

To another bowl, combine 2 and a half cups of flour, baking powder, nutmeg, cinnamon, and pumpkin spice.

Sift the dry ingredients into the wet ingredients.

Add a splash of milk and mix really well, but be sure not to overmix.

Line a 12-inch loaf pan with parchment paper.

Start pouring in the cake batter in increments.

Add some Biscoff spread and create a swirl effect.

Finish with the remaining cake batter.

Top with brown sugar and crushed Biscoff cookies.

Bake this on 350 for 30 to 40 minutes, or until a toothpick comes out clean.

Tips
